Three Cheese Swiss Spelt Panini & Tomato Soup

Winter is coming, and nothing is more comforting than a hot panini with melted cheese. Enjoy with a side of homemade tomato soup and warm up the chillest winter nights.

Ingredients

Three cheese Swiss Spelt Panini:

 

Tomato soup:

 
  • 3 Tbsp of extra virgin olive oil
  • 1 medium size white onion diced
  • 1 medium size Yukon gold potato diced
  • 6 to 10 fresh basil leaves, whole on stems
  • 1 can whole peeled tomatoes
  • 2 cups chicken broth (or vegetable stock)
  • 1/4 tsp fine sea salt, or to taste
  • A pinch of cayenne pepper
Instructions

Three cheese Swiss Spelt Panini:

 
  1. Preheat your panini press
  2. Lightly brush one side of each slice of bread with olive oil.
  3. Stack the cheeses on one of the slices of bread.
  4. Add the remaining sliced bread on top. Brush the top of the bread with olive oil.
  5. Place your assembled sandwich into your hot panini press and gently press the lid down. Make sure not to smash your sandwich and check that both sides are touching the heated grates. Leave in press for 5-7 mins or until the cheese is gooey and bread is toasty.
  6. Serve warm.
  • Tip: You can use your grill pan as well - Heat a grill pan over medium-high heat; spray lightly with cooking spray. Place sandwich on grill; weigh it down with a heavy pan. Cook until cheese is melted and grill marks appear, 3 to 5 minutes per side.

Tomato soup

 
  1. In a medium pot, add oil, basil leaves and onions. Sauté over medium heat. Stir often until the onions are translucent, soft and sweet. Around 7-8 mins.
  2. Add potatoes, whole peeled tomatoes, a pinch of cayenne pepper, a pinch of salt and gently cook for another minute.
  3. Add chicken broth (or vegetable stock), simmer in medium low heat, uncovered, stirring occasionally until potatoes are cooked through, about 10~12 minutes.
  4. Take out the basil leaves and stems. Carefully blend using immersion blender to desired consistency. (Or pour into a blender and puree. Make sure to leave the blender jar slightly opened to breath)
  5. Serve soup hot with the “Three cheese Swiss Spelt Panini” for a delicious meal.
