Meet our 100% Einkorn Sourdough—a loaf devoted entirely to one ancient grain.
We use only fresh-milled organic whole einkorn flour and a 100% einkorn sourdough starter that we care for separately from all of our other breads. Every part of the process—starter, mixing, fermentation, baking—is tailored just for this grain, which is why we can only make very small batches (10 loaves per week).
Because this bread is made with 100% whole einkorn, it is naturally very high in fiber and other nutrients compared to breads made with refined flours or blended wheats.
What is einkorn and why it’s special
- Often called one of the earliest cultivated wheats, einkorn is an ancient grain with a simple, “original” grain structure.

This is a hearty, European-style loaf—more like a traditional 100% rye or dense country bread than a fluffy sandwich loaf:
- Deep notes of honey, toasted grain, and gentle nuttiness
- A compact, substantial crumb with a satisfying chew
- A thin, crackly crust and a quiet sourdough tang that lets the grain shine
